Umami Kombu
Kombu (Laminaria Setchellii) is a thick brown kelp revered for its dense nutritional and medicinal properties.
The Origin Seaweed slow-drying process is inspired by traditional techniques from Hokkaido, the major kombu center of Japan. Our method draws a complex blend of salts & sulfated polysaccharide sugars to the surface of the cured Kombu which releases a wonderful molasses-like aroma.
Our Umami Kombu is excellent for a broth base (or for anything that is cooked in water), known in Japanese cooking as dashi. Simmer a few pieces (7-10 grams) of kombu in 1 quart of water for 15-20 minutes, or cold brew it by soaking overnight. Add it to your daily wellness routine by drinking it warm, like tea or cold-brewed as a morning tonic. The resulting infusion has a silky rich texture that can also be utilized as a nourishing hair rinse or in a warm bath to help soothe sensitive or irritated skin.
Ways to Enjoy
- Create plant-based dashi broth or use in soups and stews for added umami, vitamins & minerals
- Ground up and steeped in hot water as a morning tonic
- Cold-brewed with filtered or spring water in the fridge as a hydrating tonic
- Add to beans during cooking renders the beans more digestible. When the kombu becomes translucent and dissolves, the beans are ready to eat!
- Add a few pieces to a bath to support luscious skin, or boil and use as a hair rinse for shiny locks!
